I don't know who else reads your friends list, but I have a couple of reasons. One is that it's a bad habit from when I first started using LJ, and hadn't added any friends of my own yet. So I went through LJ as a ghost, and read your friends page.
Then, I'm not big on adding people until I've met them a few times and talked to them in RL. That's not a hard and fast rule, but it's generally the case. Many of the people on your friends list that aren't on mine are people that I fully expect to meet at some point in time, so why not read their LJ and meet them with a little bit of context in place. Also, it gives me an idea of who I might want to seek out and spend more time talking to at one of your parties.
Does that answer the question?
I don't have anime down as one of my interests, either. Then again, I don't have enough interest down.

If you want LJ to be more interesting I suggest reading other people's friends lists (people seem to read mine for some unknown reason...)
Reality is overrated...
