lol I'm all over the black beans. I freaking love those things. Empanadas, those are like little sweet fruit tacos, right? I must profess a complete lack of information about tex-mex desserts.
Empanadas can be either fruit and cheese filled or meat filled. I like the ground beef ones the best! It's not exactly like a taco as (I think) it's a dough that surrounds the filling. A little more like a potsticker.
You know? That's the first time I've heard of strawberry shortcake mentioned in anything else besides a strawberry reduction of some kind, or the lazy as hell strawberry jam method. I definitely think I'm a fan of your version.
One thing I'm noticing about here, is that the quality of our regional food (obviously, since it's seafood) varies DRASTICALLY from place to place. Is it like that for the shortcakes out there?
Oh, you have no idea. My dad does this freaking spectacular pork chops in burgundy blueberry sauce... I can't even describe it much less put down a recipe. Everything has blueberries. lol it sucks, I can't stand them.

Sounds like it's primarily a savory dish. I always assumed it to be a sweet one, from the few exposures (screw you, taco bell) I've had to them.
