Shrimp Gazpacho
from Everyday Food by Martha Stewart

Ingredients:

1 pound uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
6 plum tomatoes, chopped (about 3 cups)
1/2 small red onion, chopped
2 cloves garlic, minced
1/2 cucumber, peeled and chopped
1/2 cup roasted red peppers, finely chopped

k...that word always reminds me of playing our version of Balderdash at my house :-) I particularly liked my definition of this word the best (a patch to go over the butt to prevent gas), though I don't think FP aka mr. seriousness-liked it much :-p

*snort* I forgot about that... Lol, poor FP. It was just too easy to guess which answer was his at that game...

Interestingly enough, I don't think this gazpacho would require your gas-patch-o. ;) There was no identifiable GI distress after consuming this meal. :D

Oh, it was good, and pretty, too. :D I wasn't sure what I'd think of it since the tomato part doesn't get cooked, but I think it turned out pretty well. FP ate every last drop. :D
