If you skip the mushrooms and celery, you might need to up the amounts of the other stuff or find something else (beans? kale? broccoli?) to liven it up.
this was a soup weekend, I think! Steve and I made a super-awesome tomato and bacon soup. Perhaps I'll actually post about it... thanks for the inspiration!

And it was totally a soup weekend - Michael's Mom made a Portuguese soup of kale, navy beans, kidney beans, cabbage, linguica, churizo, and beef stock. Really yummy!
Mmmmm I'm totally saving this for when it gets a little colder and I get a super craving for soup. It's too bad that soup makes Keith want to barf, cuz I could eat soup every day in winter.
He hates every type of soup?? That's sad! Soup is wonderful stuff.
I was really surprised: I invented the recipe and it actually came out really well. Normally, my experiments in cooking end in epic failure. I love snowy/rainy days when I can make up a can of tomato soup and grilled cheese sandwiches, yum.
I love my crockpot. Love it. It makes cooking so darned easy, which is good, because while I'll spend hours in the kitchen baking, spending 30 minutes cooking a meal has me raging over wasted time. ;-)
