Dinner for the in-laws

Hi all. I need something that is good, will have leftovers and be good for a group. I'm making dinner for my in-laws, my mom and my husband. (I doubt I'll find something that I'll enjoy to make as well, so I'll make something separate for myself) It will have to be cooked in under 3 hours and um, it would be good if it could be kinda easy since I ( Read more... )

Easy and awesome - just sub a chicken for the cornish game hens, unless you're trying to be impressive and are ok with making dinner a bit more challenging to eat :)

Since its cold outside, maybe a stew? Or a minestrone soup? Serve it with some big hunks of crusty bread and a salad?

I was going to suggest the roast beef. :) Maybe lasagna? Or the baked ziti? If you double the recipe, it feeds a TON of people.

I like the idea of soup... You could do chili with some cornbread - that's easy, filling, and everyone likes chili - right?

You're going to laugh, but i eat chili everyday for lunch. (Ugh, hormones still don't let me eat a wide variety of foods)
