This was tonight's dinner - very, very yummy and easy! And I actually browned the meat with the tomatoes and spices yesterday while making last night's supper, so all I had to do was assemble and bake tonight!
If you like tamales, I think you would like this - very similar taste.
Mexican Lasagna
1 lb lean ground beef
1 (1 oz) package taco seasoning mix*
1 (14 oz) can, peeled and diced tomatoes with juice
12 (6 inch) corn tortillas
1 cup prepared salsa
1 cup shredded cheddar cheese
1. Preheat oven to 350 degrees.
2. In a large skillet over medium high heat, brown the ground beef, and stir in tomatoes (undrained) and taco seasoning. Line a 9 x 13 inch baking dish with half of the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
3. Bake at 350 degrees for 20-30 minutes, or until cheese is melted and bubbly.
*You can use a combination of garlic powder, cumin, and chili powder if you don't want the sodium/msg that is probably in the pre-packaged seasoning.
