waiting for awesomest awesome layered lasagna to be cooked. its teasing me with its aroma.
we usually make our own sauce from tomato paste. usually D makes it. this time i did, a bit nervously, since its been a long while since i made successful sauce. D tasted it and pronounced it better than his! yay! woot woot!

Pizza Quiche is basically shortcrust pastry (2 parts flour to 1 part butter pulled together by as little ice-water as possible), with a layer of cheddar cheese spread over it, then a layer of tomato sauce with sauteed or roaster onions (I used the onions from a batch of mushrooms I'd just roasted because I didn't want to add mushrooms to the actual quiche), then topped with whatever cheese you have around. I used cheddar, mozzarella and gouda, and then topped it with shredded parmesan, and it came out amazing!
It's also a lot less work than it sounds because other than cutting the pastry together, there's no real work involved. The rest is all just putting it together.
And if you're being lazy like I was last night cuz I didn't have other ingredients, you can use readymade sauce, otherwise if you want to be fancier or put more effort in, you can make the sauce from scratch.
I made it up about three years ago for the cast party when I was in Sound of Music.

If I need there to be a large amount or I want to have plenty left over, I'll also use crushed tomatoes.
Occasionally I'll really go crazy and make it completely from scratch, with fresh tomatoes and all... ;-)

when you use wine, do you cook it all in a saucepan? i, and others who eat my food, are alcohol-sensitive...
i have made complete from scratch sauce before. wow its long and involved and if it stayed good longer than a week i would totally make a ton and store it for the whole season. or month. hm, would it stay good in the freezer i wonder? *ponders the concept*
