Oooh, how are those knives? My parents very kindly gave me a knife set not too long back, and EVERY LAST ONE OF THEM HAS RIDGES! They never need sharpening, but they're so infuriating because it's impossible to cut meat straight. And shaving it? I might as well use me teeth.

those knives are really, really nice. i have a wusthof 8" chef i love and have used for years, but i think the calphalons are actually sharper and better balanced. if you're thinking about getting one, make sure you have a good local knife sharpener you can take it to every year or two, and invest in a good honing steel (by good i mean one that gets the job done, usually around $20).

if i were going to buy one knife, it would have been the 5" santoku. the nakiri is indispensable, though, if you're chopping up a lot of vegetables every day. and the honesuki cuts through meats and sinews like butter. and it doubles as a paring knife.

if you really want, i can check and see if linens and things has any left. that's where i got all mine for 50% off. gotta love going out of business sales.
