The other day we had homemade taco salads for dinner - even the tortilla bowls were homemade, but it was still an unbelievably easy meal. It was also really quite healthy since we used baked low carb, low fat whole wheat tortillas instead of fried corn ones, really lean beef, and tons of veggies.
