No boss, I actually don't like doing graphic design projects for your stupid personal crap for the money you pay me. No matter how cheerful you are when you call, it won't actually make me any more excited. What it actually does is make me want to reach through the phone and choke you.

I'm confused... does the boss pay you a separate fee for graphic design projects, but the person just happens to be your boss? If so, you should insist on being paid what you think your time is worth to do that. Or say no, if you don't want to do them at all. If you're being expected to do them as part of your normal job, but on your own time, that seems completely unacceptable...?

No, as his admin I do whatever he tells me to. Much to my irritation, he has me do his personal stuff all the time on the clock. In this case, he's having me make him signs for a personal fundraiser instead of doing my job during normal hours. He thought it would be a fun & exciting change for me, but actually I think it sucks. It's his business so he can do what he wants, but it always makes me feel slimed to do his personal crap.
