Made my MIL's zucchini bread today and then I made a diet variation of a zucchini bread I found online. I have been wanting to do that all summer. I cannot believe I had not made bread at all this season. Used half applesauce and half oil and half white sugar and 1/4 brown sugar splenda. You use half the splenda then you would the normal sugar.
