If I made Red Hare out of wool, who should I make as the rider?

He's best known as Guan Yu's horse (even though Lu Bu was obviously his original owner), so I'd go Guan Yu. If you want to sell it online, you could always make both Guan Yu and Lu Bu and sell it as a combo pack.

What does Guan Yu wear to ride? The only reference I have of him NOT in a robe is the statue you gave Skurtchasor. Or is there something special? Is green a historical convention or is that DW design?

Guan Yu just looks pimp no matter what he's doing. They tend to portray him with green robes, but I found one with some kinda blue-ish color too:
