Isn't there any ethical veal in the US? I'll admit I haven't looked. In the UK, all veal has been ethical since 2000 - it's illegal to keep them in crates and feed them a diet which makes them anaemic. I would have thought there must be US producers somewhere following those standards by choice.

Interesting, tell me more! Because as I understand it, the high-fat content diet versus restricted movement scenario is what makes it veal. Otherwise wouldn't it just be calf?

What do they do to get around that ethically?

The veal calves are kept in pens together, not in individual crates, so they can be sociable and move around. They must have access to hay/grass to allow them to start eating it as they normally would.

And, yes, it changes the meat - the veal isn't white any more, it's more pink. More on British veal and the attempts to educate consumers that they are allowed to eat it now.

Hey, thanks! That's a great idea on Britain's part--certainly better than shooting male calves or exporting them to the continent to face the same fate the original regs were supposed to prevent!

Wow, that is some gorgeous food!

I love how you captured the STEAM rising up from the pan with the cooking potatoes. Really brings to life how great it must smell.

Seriously, you guys should make an LJ food-challenge community to post stuff like this. You could do a lot of things, everything from weekly prompts like "show off your potato dishes" or some such to move involved challenges like this.
