Mmmm... That pork thing sounds nice. I agree about pork coming out dry and tough and, as it happens, the last pork I cooked was done wrapped in foil, though I'd just sprinkled it with herbs rather than adding fruit. That also came out tender, so it looks like that's the best way to cook chops/loin steaks in future. And next time I might try the orange and apple thing.

Apple is a traditional accompaniment to pork (as are prunes, though I didn't have any on the cupboard this time), on the 'serve the animal with what it eats' principle. I admit that if I had had a bottle of cider to hand I might have used that in lieu of the orange juice!
