This one is my own creation from top to bottom. Turned out well though, so I thought I'd share.
I diced a medium zucchini into small cubes and tossed it into a small sautee pan with a scant Tablespoon of oil and sprinkled it with some dressing mix. I imagine any dressing mix would do, but I used Penzey's French Country Viniagrette.
While it sizzled on medium heat I minced up about a Tablespoon's worth of a hot yellow chile pepper. I couldn't see mincing up the whole pepper as it was pretty spicy - a milder pepper, you could add the whole thing.
I tossed in the pepper, stirred it up and went to work digging around my freezer for some kernals of corn. I tossed in about a half cup of corn and stirred it up some more.
While it continued to cook (I really don't like raw zucchini, so I let it cook until soft all the way through) I seeded and diced five companari tomatoes (slightly smaller than romas, and round). I stirred them into the mix and sprinkled on some more dressing mix and served it up warm.
Makes about 2 cups or 4 servings of veggies. I gave it one point for two servings because of the oil.
Oh, it's a nice chunky dish that lends itself well to eating with chopsticks. *g*
