Zucchini Apple Muffins

This recipe is modified from the zucchini bread recipe in An Apple a Day; The Women's Auxiliary to the Medical Society; County of Erie; Buffalo, NY, 1976

2 cups sugar I used 1c maple sugar and 1c Splenda
1 cup oil I used 1c unsweetened applesauce instead of the oil
3 eggs
3 cups grated zucchini
1 small apple - diced
3 cups flour I used 1 1/2 cups oat flour and 1 1/2 cups unbleached wheat flour
1 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1/4 tsp nutmeg
1/4 tsp cloves
1 tsp orange peel I buy this online from Penzey's
1 TBS cinammon
1 cup chopped walnuts I omitted this as my husband doesn't like nuts
1 TBS vanilla

Whisk together the sugar, oil, and eggs. Add the rest of the ingredients and stir until combined. Bake at 400 F about 10 minutes for muffins, 30 minutes for cake pan, 45 for loaf. Be careful not to overbake.

ETA: It should be noted that grated parsnips, and by extension grated carrots - work quite well in this recipe. So, if you've got a spare parsnip hanging around in the back of your produce drawer and aren't quite sure what to do with it... *giggles*
