Request for Recipes and Updates

Hey all... pursuant to wanting to keep in shape A and i have decided to go two months as mostly vegan (healthy vegan. not twinkies.) as possible. Any interesting recipes with minimal dairy and oil (or links to) would be greatfully accepted. I am looking at you pyrric... XKiarna's Vegan All-Orange Veggie Chowder

Two cans organic pumpkin puree (or the fresh pulp of a baked pie pumpkin)
2 sweet potatoes peeled and cubed
1 bag small pre peeled carrots
2 cups wild rice
1/2 onion chopped fine
1 tbls maple syrup
4 tbls curry powder
1/2 tsp chili powder
2 cups water
salt and pepper to taste

in large pot sautee onion in olive oil and uncooked wild rice. Add
water when onion becomes transclucent. Bring to a boil than reduce to
a simmer. Add pumpkin puree, sweet potatoes, carrots, maple syrup, and
spices. Simmer for an hour.

also remember you'll detox a bit switching over to vegan. Increase your water intake and don't be surprised if you go through a brief cold like spell (like a half day) or if your skin gets uppity. It will pass for the better quickly.

I suggest trying to eat one raw meal a day as well. a big salad with lots of tasty things would be perfect.

Ginger Peanut Soup

Ingredients (use vegan versions):

1 and 1/2 cup chopped broccoli
1 and 1/2 cup chopped cauliflower
1 med. onion
1 tbsp ginger, grated
3 cloves garlic, minced or crushed
1/4 tsp cayenne pepper
1/2 tsp salt
1/2 tsp pepper
2 tbsp olive oil
3 cup veg stock or water
1 28-oz can diced tomatoes
5 tbsp peanut butter (natural and crunchy is best)

Directions:

In large pot, sauté onions in oil until soft. Add other veggies, ginger, garlic, cayenne pepper, salt, and pepper until veggies are just tender. Add stock or water, canned tomatoes, and peanut butter. Reduce heat and simmer for 20 minutes.

I recently made this recipe and it is absolutely delicious but very quick and easy to make! A variation is adding some unsweetened shredded coconut which goes well with the peanut and ginger flavours.

Serves: 4-6

Preparation time: 30 minutes

the website looks great too.
have you made many recipes from there? is it trustworthy?
im still not to the point where i can just look at a recipe and have a feel wether its good or not.

I just had the lawyer file a few weeks ago. They haven't even gotten to the stage where they post in the paper and notify the parents yet. After that, it will still be a couple of months while they give the bio parents a window to contest. If they don't, it'll be signed sealed and delivered sometime this fall. If they do, it's a whole other ballgame. I'll keep my lj updated as things progress.
