Heinan's no longer carries sausage casing. Giovani's isn't open tomorrow. Anyone know anyplace else which might carry sausage casings?
As it is, I might have to use commercial knackwurst, as it's supposed to be smoked, and that's an effort the schedule doesn't have time for. But the bratwurst and bockwurst are still a go...

I suspect that the Sausage Shoppe in the near west side of Cleveland (4501 Memphis Avenue, 216-351-5213) would have it. I'm sure that one of the stalls in the West Side Market would, and you might try Miles Road Market (call first?) or the Zagara's in Lyndhurst and ask at their meat counters.

so, i'm the kind of person who like to buy boneless skinless chicken breasts cuz i don't like dealing with pieces-parts.. and any meat i buy is usually of the hamburger variety...
so to see the hunk of pig part get chopped up, go through the grinder... add various other things, mix in blender.. then stuff in this thing that ends up looking very pg-13 rated.... oh my. this is not something i would have ever said 'oh sure!! that sounds like fun!'
don't worry. i took pictures.
