This debate still goes on, which is the "better" vampire. It's a thing of passion for fans even now. Obviously there are the subjective reasons. We like one more than the other and look for reasons to prove our opinion. Thing is, the factors pointed to are not terribly well-constructed across both shows or even in a single season

Yeah the writers were always contradicting themselves when it came to what the soul was supposed to mean, if you go by the early episodes then vampires would basically be little more than mindless animals, but time and time again the vampires were given enough character and complexity that we know that's not true, so it really didn't make a lot of sense for the Judge to threaten to burn vampires simply for enjoying reading or feeling jealousy. In fact Ats in Hero put forth the argument that vampires are seen by ~pure demons~ as a corrupted form of demon with too much humanity in them, so in that case the Judge should really have been burning all of the vampires, including Angelus ( ... )

In S4 Jane said a soul was basically a conscience which more or less fits with most of the show. The extent of a consciences effect on someone is up to the reader. Can you love without one and all that.
I think vamps were meant to be able to love, but not a real "human" kind, which would explain both Darla, Angel and Spike's stance changes after the soul. Even Spike says everything he felt went deeper in S7.
But yeah, they were just making crap up as they went along. Kinda understandable given Angel was like a roach the WB wouldn't let Joss kill. :P
