I really really want pho, right now. I have neither the funds nor the ability to procure it (as I'm at work) but man, I desire the pho.

Oh, and less mundaune: Funny side-effect of this whole March challenge is that I now have four stories in the works...

Where is the best vegan/vegetarian pho? I don't know where to find it at all, but love it.

I generally hit Cafe de Lat. The waiter I got there actually told me about the dashi stock in their dishes, and then let me know that, at my request, the pho could be made vegan for me...

I generally do the spring rolls w/ peanut sauce (generally veg., while the other sauces are generally not) and the pho, vegan-style.
