Harry touches his jaw, because at this point Strat cannot be referring to the shirt. (Either shirt.) He's gonna have to change when he gets back.
"So - pretty much safe then?" He looks like he's feeling a lot steadier about the situation. Funny how a decent amount of real sleep and real food can adjust a person's perspective. It's still fucking embarrassing and he never wants to think about it again, don't him get wrong, and he's still pissed at Holmes, but the cringing humiliation has faded.
"If I did not already know, I myself would not be able to tell."
Which means the physical evidence is good and gone, except for the shirt, which is not incriminating by itself. Any behavioural evidence... that, Perry is more qualified than Strat to interpret.
Harry definitely trusts Strat's judgment on that, especially over his own. Stare into a mirror long enough and what you're looking at stops making sense.
