that's awesome. Both that you were given an opportunity to reflect on the changes you've made, and the diagnosis and all. Plus I think it offers an important connection with other diets. Most people diet for health reasons and to be "skinny" (which, for most Americans, is a lot healthier). But, I think there's such a connection between what we eat and how we feel (like, with me for example, I've been chowing on girl scout cookies for the last two days and have felt like death is inhabiting my bowels... hmmm. I should do something about that). But also, a diet is SO hard because it's EVERY day, it's ingrained in our social lives, but the easy way is to take it one bite, one meal, one day at a time as you say. Nicely written too btw ( ... )

they do make low gluten hosts, so some celiacs dont take communion, some do only on low gluten hosts, and some take it and poison themselves, which i think is ridiculous.
its the same with matzah. theres gluten free matzah but its ridiculously expensive. so i just avoid:-)

Oh wow Sarah, that was lovely. Honest, graceful, not too preachy but integrated, intertwined. Absolutely wonderful to be able to, for one moment, to allow our minds to touch in this piece.
