Neat Loaf

You'll probably want to use a food processor for this recipe. You use the chopping blade inside the processor, so assembly shouldn't be too complex.

You'll need:
1 cup cooked brown rice
1 cup wheat germ
1 cup quick rolled oats or oat bran (process the rolled oats in a dry food processor until they're crumbs)
1 cup finely chopped walnuts (use the food processor to make them fine)
1 cup chopped mushrooms
1 onion, finely chopped
1/2 medium bell pepper, finely chopped
2 medium carrots, shredded or finely chopped
1/2 teaspoon each thyme marjoram and sage
2 Tablespoons soy sauce
2 tablespoons stone ground or Dijon mustard
1 tablespoon peanut butter

Preheat the oven to 350ºF. Grease a loaf pan.

I like to process the dry stuff first, the mushrooms second (til they are diced but not mush), and then last I do the onion, carrots, and pepper together. I dump the processor's contents between each one.

Mix everything together until the ingredients are all mixed up and binding together. The paddle attachment on a stand mixer works well for this, but you can use a big spoon.

Put the mix into the loaf pan and bake for an hour. Let it stand about 10 minutes before serving. Works well with butternut squash or garlic mashed potatoes, and some kind of other vegetable (we did Brussels sprouts, but asparagus would be awesome. I also served it with my parsnip garlic mashed potatoes (just boil a chopped parsnip with your potatoes and mash it with them).
