Savory Chicken Ramen Pancakes

I tried to come up with something a little different for this challenge.

Here it is:

Ingredients: Chicken flavored Ramen (2 packages), pancake mix, eggs, milk, onion, leftover chopped cooked chicken, and Sriracha. Sour cream and green onions for garnish. Not shown: Cooking oil and white wine (from a box, of course).




Dice onion (I used half) and cook with a little oil and 2 cups of the chopped chicken. Take out your daily frustrations on the Ramen packets and crush the noodles into little pieces, add to the fry pan with the contents of one of the flavor packets, some Sriracha and white wine.




Cook for a few minutes, pour into a bowl, and stick in the fridge to cool.

Make pancake mix according to directions except double the milk. Set aside.




Chop the green onions for garnish.  While the chicken mix is cooling, do your nightly chores (feed the dogs) change the tablecloth for fall, and vacuum up the tiny pieces of Ramen noodles that are now all over the kitchen floor.

After the chicken mix is cool, mix with the pancake batter (add a little more milk to make it thinner so it will spread better). Heat up your 8 inch non-stick fry pan and add a ladle-full of batter to the pan, spreading it so it covers the pan.  Cook until it starts to bubble in the middle, and flip the pancake. Cook for another minute or so and remove from pan. Repeat until the batter is gone.




Serve with sour cream and chopped green onion. Final presentation includes the ever present iced tea in a recycled fast-food cup.




These were very heavy, so one is plenty.
