Since my last post on this thing. Spent a good solid hour tonight after work, from about midnight until 1am, talking to my chef about the rest of my time at work and my future plans. It looks like I'll be moving to the saucier (sauce) position five days a week, probably mon-fri. Then I'll work saturday mornings on pastry like I've been doing and
