I don't mind at all! In fact I'd like to try some of your changes... Not the tofu though, I can't stand the stuff, no matter how determined I am to like it. I never thought to try and bake it, but it's a good idea, and putting it over rice is brilliant! Hmmm now I want some...

My first experience with tofu was the Mori-Nu silken tofu that is shelf stable and I just hated it. I was so worried because, as a vegan, tofu is in so many recipes and everyone else seemed to like it.
Then I realized that there were two types of tofu and I tried the 'steakier' kind that is sold packed in water that needs to be drained and pressed. Wow, what a difference.
I'm sure both kinds are still not to a lot of people's tastes, but I was relieved to find one that I liked and could work with.
That's the fun though of recipes that you can adapt, I'm allergic to almonds, but it works well for you. You don't like tofu, but it helps me get my proteins in.
Thanks again for sharing your recipe. It was great fun to try something new.
