Great-Grandmother Riviezzo's Meatballs
Ingredients
1 pound Ground Beef
12 Sultanas
1 tablespoon garlic powder
2 tablespoons marinara sauce (recipe to follow)
1 tablespoon dried onion
1 teaspoon italian seasoning
1/4 cup breadcrumbs
1 egg
1/2 teaspoon fennel seeds
1/2 teaspoon ground black pepper
1/4 teaspoon flaked red pepper
Instructions
Mix together all the ingredients except the sultanas. Divide the mixture into 12 sections and roll each section into a ball. Put a single sultan in the middle of each ball and re-roll the ball to seal the sultana inside. Place the meatballs into a shallow baking dish and bake for 25 minutes in 350 degree F oven.
Riviezzo Family Marinara
Ingredients
8 Sultanas
1 14 oz can diced tomatoes
4 14 oz cans tomato sauce
3 bay leaves
1 tablespoon italian seasoning
2 tablespoons garlic powder
2 tablespoons dried onion
Pinch of salt
1/2 teaspoon ground black pepper
1/2 teaspoon flaked red pepper (or more, to taste)
1/4 cup finely chopped olives (black or green)
1/4 cup finely chopped carrots
1 tablespoon olive oil
Instructions
Combine all ingredients in a crockpot or large sauce pan. Cook over low heat for 1 to 2 hours. Serve over a bed of al-dente pasta.
