Well, there's the whole portal-y thing, of course, but there's also the part where he offscreens a new shirt and a new arm into existence for Shinobu. Now, him having an extra shirt on hand for Sensui to wear, I could buy, but. . . a new arm? (At least, it was offscreened in the anime; I don't think I've seen the corresponding part of the manga.)
Then, after Itsuki gets slashed by Kuwabara, he shows up later almost no worse for wear -- he's got a scar and might be missing at least part of an eye, and his shirt is still cut, but the apparent damage left by a sword that can cut through anything is. . . anomalously superficial. Given enough time, I think he could probably heal that scar and regrow an eye if he wanted to.
Then there's the whole sinking-into-the-floor-and-reappearing-in-another-dimension thing.
Now, it could be that Itsuki just has some really eclectic Combo Platter Powers, but. . . Occam's Razor. Almost all of the weird things Itsuki does could be explained with "he has the power to screw reality sideways with a rusty
