Requested Tutorial: Keeping bits of color on a desaturated image

Skill Level: Any/all
Program: PS CS2, but is most likely translatable to any program if you know it well enough.
Notes: There are so many different ways to accomplish this - this is just the way I do it.

If you don't want to use multiple layers, there is a sponge tool. You can desaturate the image, then use the tool on "saturate" and paint over the parts you want to be colored. Or you could set it to "desaturate" and paint over the parts you want to be black and white!

I tried that - the desaturate worked just fine, but the saturate didn't. Is there a specific setting it needs to be on or something?

I'm not sure. It worked okay the last time I did it - possibly I did something else to the image at the same time to let it work okay.
