Cheesy Saturday

Last Saturday I had two of the apprentices, S and C, and one old friend, M, over for cheese-making. M brought some raw milk and we also had regular milk, organic, and goat. The raw stuff made the most serious curds, but the other ones made soft curds that were easy to work the salt into. We had four pots of cheese going to once. It is a good thing ( Read more... )
