If you need something 64-bit, go with Vista. Also, for 4GB of memory or more, it's the better choice (since 32-bit OSes only recognize about 3.3GB without PAE). XP64 still doesn't have the best hardware support, and Microsoft was much better able to strongarm companies to support Vista with 64-bit drivers.
If you're only using 2-3GB of memory, I'd recommend XP 32-bit. Personally, I'd wait for Vista SP2 before even considering upgrading.
Well I'm upgradign to some high end components like a Core 2 Quad Q6700 and one to three 9800GTXs, will they perform any better under Vista, do you think?
Yeah, they'll be fine, Vista is just bigger on everything. It'll take up more hard drive space once installed, it'll take up more memory space when running, and the graphical shell's now offloaded to the video card for rendering. On any decent machine it'll run fine, and on top-line hardware you likely won't notice, but it does have a marginal decrease in speed compared to XP for a great many users. It's a pig, for little real gain or improvement over XP (for gamers, DirectX 10 and 4GB+ support are the only real upgrades).
The interface is markedly different too. If you're comfortable with how XP's laid out, you're going to have to relearn some key UI differences with Vista, and it's arguable as to whether they're good changes or not.
Also, you'll wanna turn off UAC, or it'll annoy you with Confirm/Deny dialogs until you've pulled out all your hair.
I never go with ver 1.0 of any OS. Watched ME disintegrate over a period of a month, 95 sucked on first release, 2003 was a disaster, and Vista is absolutely notoriously piggish.
