Baklava (w/ Hints of Pistachio, Rosewater, and Cardamom)
~ A flavorful cross between candy and pastry. Can it get better than this?

Adapted from Cooks Illustrated.
Servings: ~30. Difficulty: Medium. Impressiveness: High. Time: ~1.5 hr prep, 1.5 hr cook, wait overnight before eating (gotta have a lot of patience with this one).

Cardamon + Rosewater are two of the flavor ingredients for making Lassies, so I totally believe that they would be a delicious combination in the even more delicious baklava. And adding my favorite nut? Genius.

They are like a yogurt drink in Indian cuisine. Very yummy indeed. :) I like mango lassi the best but I've never tried cardamom rosewater! Interesting!

So, you pour the syrup in at the end so it doesn't taste as good until the syrup is all soaked up into the pastry.

For me, Day 1-3 the syrup was still kind of runny and not soaked up as well but on day 4 it (dried up more?) was really nicely incorporated between the nuts and dough.
