I just applied for an overnight stocking position at Kmart. Because I worked there in 00 during my sabbatical from JMU. It's come to that. I have an interview (for a STOCKING JOB...JESUS. 18k a year for a degree WELL spent, Jimbo.) on the 23rd.
I feel like I've sold my soul to the devil.

The more cooking experience you get, the more opportunieis you will get too. You should read Kitchen Confidential by Tony Bourdain. I think he mentions that he doesn't know anybody who graduated culinary school and just got a job an an exec chef. You have to work your way up and sometimes that's the best education of all. You'll get there.
