Pumpkin pancakes

What better to make the day after Halloween than pumpkin pancakes? This is our Sunday ritual. I can't tell you how many batches of pancakes I've made. Probably hundreds and we frequently try to do something different. Yummy! We used to use Bisquick but I found out it has hydrogenated oil in it, so I looked around and discovered Hodgeson Mills. I've been making blueberry ones for a while but you've inspired me to try some others.

Pancakes are the easiest thing to make. I have no idea why people buy mixes.

My starting recipe was from Mark Bittman's How to Cook Everything.

For lighter, fluffier pancakes, add 1t of baking soda but I like them more cake-like.

They really are more than the sum of their parts. Adding some vanilla is a good idea, and I'm sure most any spice would work well too. I cook them with a generous amount of butter on a cast iron skillet, making sure they get nice and crispy on the egde. They are more like a crepe than a pancake, but they are still delicious.

I need to try these. They're like banana scrambled eggs! I'll have to sequester some bananas away so they can actually ripen. They don't live long in our house.
