Gingerbread

Here's the thing: gingerbread - when well done in cake form - is absolutely fucking delicious. You won't even believe it. Now that it's October, gingerbread is mandatory. Even time I make this stuff I am regretful that I don't make it more often. So, that being said:

Well, this one better be good! I've been searching for a good gingerbread recipe for years. My mom used to make it, but can't seem to remember her own recipe. Last time I tried to make it, I made some unknown mistake that caused a gingery eruption in my oven. Seriously. Gingerbread dough volcano. (I was halving a recipe, so my mistake probably lied somewhere in that process, but I still don't know what that mistake was.) Need to try again (with great care) because I love soft, sliced gingerbread!

This recipe can cause an eruption if you use a 9X9 pan as directed. The 9X13 pan yields a safer, albeit slightly less moist cake. It's not really bready and sliceable, but it is soft, moist, and altogether delicious. Give it a shot and let me know what you think!

I have to vouch for this recipe. Jon made it years ago and it was absolutely delicious. I haven't tried it myself, though I will now. It was my first experience with real gingerbread. I'm salivating just thinking about it!
