I've had some amazing Chinese experiences since starting my job. Though the focus is on Sichuan (aka Szechuan) cuisine--most of which I cannot handle because it's so oily and spicy. My boss is from the north and has helped me create some nice dishes at home.

The Seattle Aquarium has a petting area for Sea Cucumbers. They look like they would be spiky and really sharp...but they are soft. If you touch one of the points it just moves with your finger. It was really a shock!
