I recommend Laura Plantation as a very educational tour. The NOLA Zoo is also one of the best zoos I've ever been too and the only thing I like about New Orleans. If you are interested in Cajun culture, try a trip through Eunice, LA.
I mostly only have suggestions for Texas.
Did you know that there's currently a King Tut exhibit at the Dallas Museum of Art?!!!!!!! We're going to that for our anniversary in a couple of months. :) Tickets, I believe, need to be bought in advance.
The dogwood trail in Palestine, Texas may be in full bloom by the time you are here. There are driving and walking options. We always drove through them when I was a kid. It's lovely. Also in the Palestine area are Caddo Indian mounds and a missions park. The Tejas Missions Park is a recreation of what the mission would have looked like since it's long since gone. I believe there are also old CCC buildings and history about how much of the forest was replanted in during the CCC years. There's a neat steam train that runs from Rusk to Palestine and back,

PS One thing neat about Laura Plantation is that it's an old Creole Plantation and doesn't look like the typical Southern Plantation at all. It's a very popular stop because it is so unique and historical. Don't be put off by the fact that it's popular. The feeling around the place is very authentic.
If you are in Dallas over the weekend, go to the heart of downtown. There's a little train running through the city that will take you from place to place. There is a wonderful art museum that randomly offers free or discounted admission. Also, it's pretty fun to go to the top of the "ball" tower (not sure of the name), but it costs a little. Look for the Dallas information center; there are all sorts of amazing maps on the wall, and old men running the place who will tell you stories. Then wander around the bases of the skyscrapers, especially Fountain Place. You will love it! Here, check out this map. You can park at the Dallas Art Museum, and take the train to the other places.
My brother is going to college in Longview, which is on your way. Wave when you pass his exit!
Nearby somewhere is Barksdale Air Force base, and I am sure they have something organized to enjoy. My brother has been out there to see the space shuttle as it flew home, and for air shows.
