Cool! Thanks for making such a nice write up. "B" with apple sauce jives with some of my experiences using fruit to replace lipids in muffins. They rise just fine and end up kind of thick/chunky, moist inside with a vague and not-unpleasant fruitiness.
Btw, a vegan I used to know would replace 1 egg with 1/8 cup vegetable oil. This worked fine for brownies and made them fudgier.
