Food allergy safe baking

Puffin is on a diet to see if she has any food allergies. That set me on a quest for a wheat free, egg free, dairy free, soy free, corn free, potato free, sugar free Bread. Because, you know, I like challenges.

Rice flour isn't very structural, so disintegrating things may be an ongoing problem, but I suspect a quickbread with fewer lumps (apples+raisins+nuts = lots of lumps!) might be better behaved.

That's great that you're doing all that research for her. Go you! Do keep us posted. :-)

Btw, the Chinese sweet rice cakes also have a bit of a gritty mouthfeel to them too. I never thought of why that would be but it jives with what you're saying here. I wonder if you can process it even finer in a food processor to alleviate that?
