I just skimmed this and will definitely reread later (because there can never be enough Klaroline meta), but I think Joseph recently said in an interview that he noticed her when he turned Tyler (which had also been my longstanding theory). I'll try to find it once I get home if you're interested?
I would love to see it but don't go crazy looking, I'm sure it'll pop up on my tumblr dash again eventually. There seems to be a never-ending cycle of klaroline interviews to ensure everyone sees all of them, no matter how late they get into the ship. :)
Personally, I never really liked the idea of him noticing her then or even earlier. So much on this show (ie the non-Damon/Elena/Stefan stuff) happens off camera and we often don't even find out about it until much, much later so I always feel like I've been slapped in the face by the news. "Of course everyone was told about this major development. Why would you assume, just because it would have been shocking and dramatic when the news disseminated through the group, that it would be anything you'd want to see?" Having Klaus really notice Caroline for the first time in the middle of all that chaos without even a momentary pause in action for some meaningful close-ups would just make me sad.
Plus, I like the idea of him starting to care about her after he nearly kills her. If he saw

I never read this interview, so I don't know, but there's a difference between noticing someone and liking them. Before, Caroline was just collateral, but I think he did notice her and her devotion to Tyler as Klaus turned him. That doesn't mean that he instantly liked her (but I do think that it helped build his interest in her later). I think the birthday scene is where he finally sees who Caroline is and develops feelings for her. He's already seen her devotion and now he sees her strength. Everything that happens afterward just builds on what he already sees in her.
