Jim's Chili Recipe
based on this recipe:

Ingredients
1lb ground beef
1lb ground pork
1 15oz can chili beans (pinto beans in chili sauce)
1 15oz can (red) kidney beans
1 28oz can diced tomatoes with juice and seasonings
1 6oz can tomato paste
1 yellow onion, chopped
1 bell pepper, seeded and chopped
2 serrano chile peppers, seeded and chopped
1 quart (32oz) beef stock
1/2 cup beer, preferably regular Shiner (optional)
Seasonings
1/8-cup (2 tablespoons) chili powder
1+1/2 teaspoons Worcestershire sauce
1+1/2 tspns minced garlic
1+1/2 tspns dried oregano
1 tspn ground cumin
1 tspn hot pepper sauce (Tobasco, etc)
1/2 tspn dried basil
1/2 tspn cayenne pepper
1/2 tspn paprika
1/2 tspn white sugar
1/2 tspn salt
1/2 tspn ground black pepper
Serve With
corn bread or corn chips (Frito's, etc)
shredded cheddar cheese
milk
Tools
cutting board and knife
fry pan and spatula
large pot and spoon
Directions
1 - Prep: de-seed peppers (carefully! try not to touch the peppers at all, and if you do, don't touch your eyes!); chop onions, celery, and peppers; mince garlic
2 - Prep: brown the meats in a pan, breaking up into ground pieces; drain excess grease
3 - Add in all ingredients and seasonings, stir, and let simmer on low heat at least 2 hours (longer is better), stirring occasionally
4 - After simmering, taste and adjust seasoning as desired
5 - Allow to cool; serve!

Cook time 2+ hours
