It reads like it's one of those scenes where someone's defending the idea of taking on a job. In this case, it's Eliot and Nate talking, quietly in the brew pub, and the others aren't there... Here's a pretty close transcript:
Nate: It's just- it seems like he should go to the police-
Eliot: I know... what you're going to say, Nate, but I wanna tell you something about Toby. He taught me how to use a knife.
Nate (raised eyebrows): Use a knife.
Eliot: Not like I use a knife. He taught me how to cook.
I was out of the service and i was working for my second BMZ(?) and the jobs we were taking were way across the line, past extractions and security actions-
Nate, nodding: Wetwork.
Eliot: Yeah. Anyway, I met Toby. We were reconning this restaurant in Belgium and we should've closed him out. I should've been in and in under 90 seconds but I wound up talking to him for three hours. he showed me that I could use my knife to create, instead of destroy. I stuck around for a couple of months, he taught me everything

I think the "BMZ" was actually "PMC," or private military contractor. Like we saw in Homecoming Job. Which would make total sense for Eliot, given his, um, *skills*.

I adored First Contact. Willy Riker, director!Sophie (be afraid, be very afraid), Parker's ET fixation (seriously, I've been waiting FOUR SEASONS for someone to make an "E-liii-ooottt" joke!), and THAT SONG. Which now owes me rent for all the space it's taking up in my head. And all directed by Frakes, who also directed the ST:TNG "First Contact" movie!
I thought, this is it, this will be my happy place episode … AND THEN I GOT THE ITUNES PREVIEW FOR 504!!! That one may have injured me.
504 has me very excited for all the Eliot/Nate shippers out there. I'm half expecting a barrage of fics to start showing up based on the preview alone, three days before the episode even airs. :)
