(I think, statistically, the English eat more curry these days than fish-n-chips. It's one of those factoids they bring up in newspapers occasionally. We can't help it, we're English, and our cuisine is the same as our language - full of stuff we nicked from other countries and then mangled to suit our tastes).

And I wish to have a recipe for fairy cake. Because earlier today Ken and I decided 'fairy' was our theme for the day, since fairies have cropped up multiple times without our planning.

Fairy Pudding (as hand written in ink opposite a recipe entitled Pastry for Friar Tuck's Mock Venison Pasty Pie)
Put one breakfast cup water & one tea cup sugar with juice of two lemons to boil.
Mix 1 1/2 tablespoons of cornflour with water & add to the boilng mixture & boil for 2 or 3 minutes.
Whip the whites of 2 eggs to stiff froth & mix all together - Cool in mould.
It goes with 'Custard Sauce', presumably in order to do something with the yolks:
1 teaspoon cornflour to 2 teacups of milk with the yolks of 2 eggs, sugar & salt: heat till it thickens: pour over the mould.

These are rarely seen at an English table, although they form a very pleasing variety. Boil a large red beetroot until it is very tender; then peel it, cut it into thin slices, pound it to a pulp in a marble mortar, and strain through muslin; add the yolks of five eggs, two tablespoonsful of flour, four of cream, plenty of pounded loaf sugar, half a nutmeg grated, and a wineglassful of brandy; rub the whole into a batter, and fry the pancakes with melted butter, ghee, or lard; served them up hot, garnished with green candied sweetmeats.
