So

I'm cooking for the boy tomorrow..

And most of you probably know that
I don't really do much of that..

I know how to make burgers, tacos, shake and bake, pasta..

Suggestions/recipes?

oh my goodness--i've missed a ton since i left!!! congratulations!!! i think i might be near you...is Williamsburg close by? i left my phone number on my journal for you, just incase...

recipes...there's a campbells can of stuff called, "chicken verde cream" or something like that--and they have an AWESOME casserole recipe on there that is SUPER easy and tastes REALLY good. it takes like 30 minutes (25 minutes in the oven and 5 of prep)--it is sooooo easy. i highly recommend it.

I think you should begin with a Caesar Salad -- toss romaine lettuce so that it's lightly coated with Caesar dressing. Then, top it with Parmesan cheese and Croutons if the mood strikes you. It comes out the best that way - Just don't do it too soon in advance or it will get soggy.

Lemon chicken would be an easy and tasty main dish. And it's good for you! Steam some broccoli on the side and maybe have some diced red potatoes -- drop a hint of crab boil in the water when you boil them for a taste explosion.

Pick up a cheesecake from wal mart for dessert. Or make it if you're feeling brave!

Chicken and Mushrooms

Ingredients:

1 egg

bread crumbs

2 lb boneless chicken breasts (or less)

1 lb. sliced muenster cheese (about 6 slices)

2 4 oz. cans of button mushrooms

½ stick butter (or less)

Cut chicken into bite size pieces. Soak in beaten egg then toss in bread crumbs. Fry in half stick of butter until cooked and browned.

Spray 3 qt. casserole with non-stick coating and sprinkle bread crumbs around the sides. Layer ½ of the chicken, ½ the sliced muenster cheese and 1 can button mushrooms with liquid (the juice is what makes it good!). Repeat with remaining ingredients.

This can be frozen at this point, or bake at 350 until cheese is melted and bubbly. (15 minutes or so?)

Yummy!
