Roasted vegetable soup

This is a recipe I've used for years, one I sort of made up and sort of copied from somewhere else. It works for almost every kind of veggie, and it's pretty straightforward to use. I made it yesterday with pumpkin, and on a whim took a bunch of pictures of the process. I thought I would post them here. :-)

Mmm - perfect comfort soup :) I love to add an apple or two to pumpkin/squash soups for just a bit of tart-sweetness.

One of these days I will get an immersion blender. Of course, I only remember that I want one when I have to blend soups in batches in my regular ol' blender ;)

This looks fantastic! I've been on a pumpkin kick lately. I'm definitely going to have to give this a try.
