Almost every year, I have the privilege of participating in an Alternative Break trip through the university I work for. The role I play is that of the Learning Partner. Well, there wasn't much I could get this week in way of meat, so I'm going to be relying on beans, eggs, and peanut butter for my protein. Breakfast is going to be oatmeal and a banana. I'll probably be eating more sandwiches than usual for lunch (bologna and cheese ftw!), with an apple and a handful of raisins and nuts. Dinner is going to be nearly vegan - bean burritos, soup, corn cakes with beans, beans and veggies, beans and more beans...

I'll definitely be keeping my eyes open for buy one get one specials or great sales on meats for next week. And it's totally true that even the simplest of foods can taste amazing with the right spices tossed into the mix, so keeping the pantry stocked with those tasty staples is also going to be a priority. There are some pretty good deals on bulk spices right now.
