Okay, so, one of the things going vegetarian did for me was to force me to start learning how to cook more competently. No more heating up a can of vegetable beef stew when I got hungry. And there just are no vegetarian substitutes for some foods -- chicken noodle soup, for example. Sure, there are recipes out there, and probably some of them taste ( Read more... )

This past week I recreated a childhood favorite (tater tot casserole) using fake ground beef, but think next time I'm going to try lentils and chopped up peanuts instead.
C misses chicken salad sandwiches hard core and perhaps this would work.

Also, I've recently been tweeting about my sammiches.

Ooh. That sounds tasty. And lentils are pretty much miracle-food, IMO. Even if the taste winds up not being very similar, it'll probably be good.

A more exact match for chicken salad sandwiches would probably be to chop up those Morningstar Farms fake chicken strips (not the breaded ones) and use those. The chickpeas are pretty damn good, though.

Yeah, I needed the first time to be as close as possible to make sure I was doing it right, but now that I have the gist of it I can mess around.

I'm sure those would be closer, but I'm trying to veer away from fake meat as much as possible. It's more expensive, usually less healthy, and not really necessary. Though I do crave some of the fake products from time to time, it's more about liking them for themselves and not needing the meat substitute.

I generally try to avoid them too, for pretty much the same reasons. And anyway, I tend to find that the best substitutes are things which can fill the same place in a meal, but aren't necessarily meant to be a close imitation -- so instead of the types of Boca burger trying to be as much as possible like a real burger, a black bean burger. And I can make those myself, no need to pay someone else to do it. Fake chicken is my weakness, though; it's everything I miss about chicken (and chicken is the one type of meat I do miss from time to time) without the negatives. And so much less prone to creepy texture problems than other fakemeats.
