Last night leahseraph and kaflurbaleen came over, and we made molé and fresh tortillas. Most tasty, and a good use of cast iron.

Molé
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • vegetable oil
  • 1 lb chicken thighs, cut into bite sized pieces
  • 1 cup chicken broth
  • 4 roma tomatoes, finely chopped
  • 1 tomatillo, finely chopped
  • 1 green bell pepper, finely chopped
  • 3 serrano chilies, minced [We only used 1/2 of the seeds & pith]
  • 2.5 oz bittersweet chocolate, chopped
  • ~10 almonds, ground
  • 3 t cumin
  • 1 t oregano
  • 1/4 t cloves
  • 1/3 t cinnamon
  • 1 T chili powder
  • 1 t ground chipotle
  • 1/3 cup cilantro, chopped
  1. Brown onions and garlic in oil.
  2. Add all the other ingredients except cilantro.
  3. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the chicken is tender and the sauce is all soft and blended (an hour or so).
  4. Uncover and let the sauce thicken.
  5. Add cilantro and serve.
