That's because she was using a mod and rocket jumping to areas that would normally be unreachable (thus for example showing how beyond the parameters of the level the makers used tops of buildings to create the feel of depth for the Egyptian city as you see in #8 :3), though indeed some of the defining features of Serious Sam are large open areas with tons of enemies. I assure you it is a very well made game in every respect :3
