Im with you on this.
But potlucks? Not everyone knows period cooking and those in charge need to give some outlines of easy simple things for those not cooking.
At least what can be substituted and still have the feeling of period cooking.
Potlucks should never be divided by name but by experience. And if i were King i would outlaw potlucks and turn it into assigned dishes and those who cannot cook may pay for participating.

There are plenty of recipes that are not difficult to cook, that do not involved techniques that differ from our usual ones. I autocratted an event which included a potluck and i made recipes available to people who were unfamiliar with period cooking.

Another time i attended a potluck and the organizers supplied us with recipes, so that each was cooked by 2 people. Amazing how differently a dish can be interpreted...
